Compact pub brewery with a 2-vessel brewhouse, tanks, bottling
equipment, and utility systems. The system consists of the following
components: 1. Malt mill (Sommer, 2017) Roller mill on a painted steel
frame with a capacity of approx. 400 kg/h of malt (2.2 kW motor
power), featuring a mechanism for fine, rapid adjustment of the roller
gap and a bagging spout at the bottom. 2. Brewhouse (Wengert, 2018)
Two-vessel brewhouse with a mash/wort kettle and a lauter tun made of
stainless steel with copper-clad lids. The kettle (nominal capacity:
500 l) is equipped with a top-driven two-blade propeller agitator and
is fired by a gas burner (Weishaupt). The lauter tun is equipped with
a rake, a drop floor, and a side spent grain flap with a chute. The
brewhouse features a control system (Movonik, 2017) for automating
temperature control and agitator speed. The brewhouse is mounted on a
stainless steel frame that includes a wort pump, control cabinet,
control unit with touchscreen display, and various pipes, valves, and
fittings. Wort cooling and aeration are provided by a freestanding
two-stage plate heat exchanger and a wall-mounted wort aeration unit.
3. Fermentation/Storage/Pressure Tanks/Transport Tanks - Open
fermentation vat (Speidel) with a capacity of 675 liters. The vat is
equipped with a temperature sensor and temperature control unit,
jacket cooling, a lid, and outlet lines at the bottom and in the lower
section of the frame. - 5 cylindroconical fermentation and storage
tanks (Mueller, 2017), each with a capacity of 1,250 liters, 2 cooling
zones, and up to 3 bar of overpressure. Each tank is equipped with a
temperature sensor, its own temperature control unit, a pressure
gauge, a bung, a sampling tap, a cleaning line, and a discharge line
with a manual valve. - One cylindroconical fermentation and storage
tank (Mueller, 2017) with a capacity of 625 liters, 2 cooling zones,
and an operating overpressure of up to 3 bar. The tank is equipped
with a temperature sensor and temperature control, a pressure gauge, a
bung, a sampling tap, and cleaning and discharge lines with manual
valves. - 4 horizontal dispensing tanks (Mueller, 2017), each with a
capacity of 520 liters, a cooling jacket, and up to 3.9 bar
overpressure. The tanks are mounted on a shared stainless-steel truss
structure. Each tank is equipped with: a temperature sensor and its
own temperature control unit, sight glasses, a sampling valve, a
hose-type level indicator, a pressure gauge, and a discharge line with
a manual valve. A four-line CO₂ pressure-reducing station is also
located on the side of the tank group. - Horizontal transport tank
(Mueller, 2019) mounted on a frame with fork rails and jacket cooling.
The tank has a capacity of 1,020 liters and can withstand up to 3.9
bar of overpressure. Equipped with a pressure gauge, safety valve,
sight glasses, and a discharge line with a manual valve. Suitable for
use with tank liners. 4. Filling - Batch bottle washing machine on a
mobile stainless steel frame for processing up to 10 bottles per
cleaning cycle. Additional equipment includes a centrifugal pump, a
detergent tank, a fold-down stainless steel hood, and various pipes
and fittings. - Filler for party cans and siphons (Leicht, 2018) with
two filling stations. Semi-automatic, mounted on a stainless steel
frame with various fittings and controls. 5. Utilities - Stainless
steel hot water tank with electric reheating via screw-in heating
elements with a power rating of 7.5 kW. Upright, open stainless steel
tank with a lid. - Cooling system: Air-cooled compact process chiller
(MTA, 2017) with scroll compressor and pump. Rated for a nominal
output of 5.7 kW. Refrigerant: R410A - Compressed air supply:
Reciprocating compressor (Boge, 2017) with 1.5 kW rated power,
delivering a displacement flow rate of 260 l/min and a final discharge
pressure of 8 bar. Mounted on a frame with a compressed air receiver.
The compressed air is dehumidified via a wall-mounted refrigeration
dryer (Boge, 2017). 6. Miscellaneous - Centrifugal pump (Speck) with a
power rating of 0.9 kW, capable of delivering 80 l/min at 4.8 bar.
Mounted on a mobile stand with an electrical cabinet featuring a
digital control panel. - CO2 gas detector (Analox, 2018), Additional
